Professional (2017-present): Eric signed with the Sioux Falls Storm during the 2017 season.
Senior (University of South Dakota, Vermillion, SD, 2015): Eric was one of four team captains and he competed in all 11 games. He led the Coyotes and ranked sixth in the Valley with 45 receptions, had the second-most receiving yards on the team with 470 and scored two touchdowns and he returned five punts for 11 yards and two kickoffs for 31 yards.
Junior (University of South Dakota, Vermillion, SD, 2014): Eric competed in all 12 games during the season. Shufford led the team with 53 catches for 699 yards and five touchdowns, averaged 13.2 yards per catch, returned four punts for 32 yards (8.0 ypr) and 20 kickoffs for 356 yards (17.8 ypr). He ranked 11th in the MVFC and 79th nationally in total receiving yards, ranked seventh in the MVFC and 86th nationally in receptions per game (4.4).
Eric was the MVFC Commissioner’s Academic Excellence Award winner and was a MVFC Conference Honor Roll member.
He earned Honorable Mention All-MVFC honors.
Shufford was named to the MVFC All-Newcomer Team.
Eric was named Henry Heider Most Valuable Player (USD award) and Dave Triplett Offensive Player of the Year (USD award).
Sophomore (San Bernardino Valley College, San Bernardino, CA , 2013): Eric was voted a team captain. He hauled in 59 catches for 659 yards and scored seven touchdowns and also returned 23 punts for 342 yards.
Shufford was an All-Conference wide receiver, return specialist and all-purpose at San Bernardino Valley in 2013.
Freshman (Weber State University, Ogden, UT, 2011): Eric caught nine passes for 120 yards in 2011.
High School (AB Miller): Eric played football, basketball, baseball and ran track.
He was league MVP as a quarterback during his senior season.
